Homemade from SCRATCH - chicken balls, curry sauce & fried rice.
When we get Chinese take away this is what we would usually order, so I wanted to try a homemade version. And it turned out way better than the real thing. :-)

Mairead is a genius, her sauce tastes better than the real thing.
For the Fried rice:
Cook rice a little less then you normally would. Let it cool completely.
Then in a pan add oil, soy sauce, 2 whisked eggs&chopped scallions.
Add the rice in and stir constantly so the rice&eggs don’t burn at the bottom.
For the Chicken:
I just used a tempura batter.
1 cup of flour
1 tablespoon cornstarch/corn flour
1 1/2 cups of seltzer/sparkling water
I wasn’t sure how much I would need, I used 2 chicken breasts and only really needed half that amount of batter. (But I’ll know for next time).
Heat oil in a pan/pot, test the temperature by dropping in a bit of batter, if it floats and turns golden brown you are good to go.
I cut the chicken into roughly 1” pieces. Drop them in the batter, then lay them gently in the oil (you do not want this stuff to splash!). Once they have turned golden brown, take one piece out&cut in half to make sure it’s cooked the way through
